Dough

Warm bowl of electric mixer with hot tap water. Measure flour and yeast into mixer bowl. Add hot water and olive oil. Put dough hook on mixer and mix until dough pulls cleanly from sides of bowl (speed 2 on a KitchenAid, about two minutes). Knead at same speed for 4 additional minutes. Remove dough from bowl, grease bowl with olive oil, then replace dough in bowl. Turn dough once to coat with oil. Cover bowl with plastic wrap, let rise for at least one hour, or overnight. |
Chicken and Marinade

Split breasts in half and slice each half into 4-5 chunks.
Combine ingredients for marinade and submerge chicken in it. (Add water if necessary to cover.) Let sit at least 1 hour, up to 8 hours. |
BBQ Sauce
|
Combine ingredients in small sauce pan, add spices to taste. Simmer for 10 minutes, stirring often. Remove from heat. Separate into two batches, one for basting the chicken, and one for topping the pizza. |
Toppings
|
Slice pepper into thin rings.
Slice onion into thin rings and separate. |
Final Preparation

Prepare charcoal grill. Pile charcoal on one side of the grill, place the cooking grate on the grill, and let it preheat. Set chicken pieces on grill, and brush them with BBQ Sauce. Let cook one minute, then flip over and brush other side with BBQ Sauce. Cover grill and let chicken cook for about five minutes. Flip chicken again, brush with remaining BBQ Sauce, and continue cooking until done, it should only be another minute or two. Take the chicken off the grill, and it let sit on the counter for at least five minutes. Meanwhile, place a round pizza stone on the grill, making sure none of the stone is directly over the coals. Chop the chicken into bite-size chunks. Divide dough in half and roll it flat with a rolling pin. It need not be a perfect circle. Cover the pizza peel with cornmeal and put the dough on it. Cover dough with reserved BBQ sauce, and top with half of the grated cheese mixture, chicken, peppers, and onions. Carefully slide pizza onto stone. Immediately cover the grill. The pizza should take about 8-10 minutes but may take a little less or more time depending on the temperature of your grill. Check it frequently to make sure the crust does not burn. While the first pizza is cooking, prepare the second one. When the first one is done, put the second one on the grill, then slice and serve the cooked pizza immediately. |
